I'm back!

Hihi. Still there?
Yeah. I'm finally back to 'Got Facebook' land with extra many kilos and a rounder ass. LOL. No piece of summer for me except the very day i arrived, which almost got me roasted. Weather in Melbourne is so unpredictable; summer in the morning, autumn/spring at mid noon, and winter at night. Nevertheless, the quality of the air is sooo sooo good; i felt as if i had been deprived of fresh air, i couldn't stop breathing as much as i could the moment i got back here.

Beijing has been treating me well (which explains the extra kgs) but i find myself over pampered  by the comfort and shelter that i received in that city. I find myself no longer able to fight or even surviving in the big metropolitan with the population of the whole Australia. Maybe intimidation has gotten over me. Yeah. Am glad to be back here. HEHE.

60 cupcakes of 4 different flavors in the shape of the number 60 and three tiramisus in between.
Didn't do much baking for the last couple of months, except my dad in law's 60th birthday cupcakes. I didn't have a proper big baking tin back in Beijing that could cater for 30 people, so i decided to make cupcakes instead. 60 cupcakes for a 60th birthday. I had to keep them simple as well due to lack of tools and piping instruments; hence the rather amateur but i guess still a proper birthday presentation?

Animal Baos and MJ's Flourless Chocolate

My supposed to look like "Piggies" baos
Seems like I have abandoned this blog. Tried to put in more effort to update regularly, but my studies have indeed taken quite a toll of my time. Not baking though (HEHE), nothing can ever substitute the time for baking. At least for the present time and current condition.

These baos were made two months ago after i was struck by a picture (which i couldn't remember where now) online. I tried to imitate some funny animal shapes, but for a first timer, they didn't do the justice. Oh well, at least they had this smooth silky skin which proved my kneading effort!

Mice?
So what's for breakfast?
The pigs are 'char siu' which the mice are 'tao sar'. My hub got a bit excited one night after finding a good place for 'sweet and sour fish' (now who's the big fan of sweet and sour again?:-P), and being so satisfied, he decided to take away bbq duck, roast pork, char siu, and beef slices (apart from chicken, i believe it was nearly all kinds) as he was making payments at the counter near where they usually hang their 'roasties'. Yeah, we had the bbqs straight for a week, until eventually I decided to make use of the char siu. Hence the reborn char siu pig baos and some flaky pastries which i will post later.

My hub turned ** a week ago; the very next day I returned from a field camp at Dookie. I only had a few hours in the morning to bake him a nice birthday cake, thus this easy flourless dark chocolate cake. The cake itself was light and moist but I coated with chocolate cream cheese as icing hence the whole thing became too rich for my liking. I would drop the icing the next time i make this cake.

Very simple deco due to time constraints, but i'm glad Hubby dear likes it. Blessed Birthday and many blessing always! :-)

Joanna's B'day Cake

Not baking a real cake for a long time has really taken a toll of my skill. I trembled, confused not knowing exactly how i am going to do it. It was Joanna's,daughter of my lifegroup leader 15th Birthday.

A simple cream cake, Japanese Cotton Cheesecake with Lemon Curd.

My hub told me to use up the ingredients stocked up in the cabinet. Which means i wasn't allowed to buy any decorative items or fresh fruits e.g. strawberries. With only cherries available as the red, i snipped some basil leaves from the poor plant. In the end, i decided it looked more like a Christmas cake than a birthday.

Simple 6 lemon cupcakes to surround the cake. 6 to carry the six letters in 'Joanna'.

With one extra i reserved it for hubby.

Blessed 15th Birthday, Joanna. I hope you like the cake.

Updates?

Sigh, life has been pretty hectic lately, hopes came crushing down and nothing looked eventually right. As much as i dislike the place where i am right now, and not to mention the current lifestyle and career, I had promised to put myself alive in God, trusting that He is in control. I have never come across a job which i dislike soo much, i'm beginning to wonder what's the purpose of this, and if this contributes as part of the prospect towards my ultimate goal.
When i wasn't working, i wanted to work soo badly. And now tat i AM in a job, I want to go back to the original. It's just a simple small request, really it is. I'm not demanding for a super high paid important role in a BIG multinational company, but that job, the one that i have set in my heart since i first started, in tat part of area tat i know i wan to hook on to until my retirement age. Sigh, this is the real life and i have to face it no matter what. A girl has to grow and do what she has to!
Enough abt the rambling and growls, here is sth to cheer on for: the ultimate chocolate banana cake a.k.a Kimmie's 16th birthday cake, with strawberries and rochers.....i've seen lotsa decos like this, and ya, they do come very handy, especially for novice bakers like me! I only spent less than half a day on this cake (incl. baking n frosting n deco) coz i had other pastries to look after, but thank God, it was a success (or at least i think so)!
Happy blessed belated B'day my dearest sister! Jie Jie loves you always!

BTW, someone has been working till 11pm almost every nite making tat 12 hours straight from 9am, is this considered also as a normal part of living? I wonder...
Ya, i know, it's financial year end......

To my wonderful Mom

Today is a day to remember and celebrate a beautiful woman who means so much to me, and i want to specially dedicate this post to her.
On the day she conceived, her heart was filled with so much excitement and joy. Thrilled, she prayed for a healthy baby.
Nine months later, a baby was born. It wasn't a smooth delivery, there were complications but she was willing to give up herself so that her baby could see the world.
She shed a tear when she saw her beautiful baby, it was her utmost treasure.
She nursed, she cared and she loved.
The baby thanked her by crying all day long. It was alright, she thought to herself. As long as my baby is healthy and well fed, I am happy.
Alas, her worst nightmare came months later.
The baby became ill. It trembled with cold, it cried non stop and there was nothing she could do.
The fever spiked up, the baby had a fit and still, all she could do was watch.
Worries, sadness, frustration and anger felt her heart.
She wished it was her and not the baby.
She wanted to save her precious baby.
She consulted doctors after doctors. She begged them to help her baby.
She spent sleepless nights in the hospital and in her room to monitor her baby. She wanted to make sure it was doing ok.
When the doctors couldn't find the cause and solution, she was discouraged. She cried all day long for her baby.
Hopeless, she fell onto her knees and made a sacrificial prayer,
"Lord, take my life in exchange for my baby. You have allowed her to be here at this time in history. You have formed her wonderfully. Even in my womb, I could feel Your hands meticulously shaping her every second and every day. So Lord, please do not take her back. If You need someone to be with you, I'm willing to give up my own life. Take me instead. I want her to grow up to fulfill that special purpose You have set in her for this generation. I want her to feel, sense and see this world You have created."
Because of this prayer, I am here today. My mother may not be the most perfect person in this world, but she is the most wonderful mom to me. She's the mother who was willing to give her own life for me, the mother who nurtured and taught me to be a better person, the mother who made sure i had enough to eat and wear throughout, the mother who sacrificed so much to get me well educated and the mother who prayed hard every day for my well being. I love you mommy! Blessed Birthday!

Happy NIU year!!

It's a moo moo year this year, as how the Chinese call it. Honestly being brought up in a Christian family, i'm not so much of a fan of the animal years, and i dislike it when people characterise me according to the animal of the year i was born. I call it crap, and no offence, but everyone is unique and God has created mankind to be master over animals, so why should we let ourselves be judged by these animals? Anyway, here's something which i find very cute, a red packet (hong bao) we got from the yogurt pack.

Co-incidentally the word New rhymes with 'Niu' of the Chinese Character, something which i have never thought before..hehehe, interesting.

Yeah, time flies, i've said it again. Was anticipating for CNY to come previously, and before i actually realise it, it's the second day already! Have been eating for 3 days in a row, guess that's how CNY is supposed to be, FOOD!! Not wholly of course, but mainly. Hehe.

Here's a recap of the celebration here this moo moo year:
Before Chinese New Year
Like what i said in my previous post, CNY without pineapple tarts isn't complete. I think it's somehow a Malaysian Chinese custom, we often serve guests with pineapple tarts, nut cookies, lapis kek, nian gao, prawn crackers, mandarin oranges etc etc. Ya, so i bet almost every house that bakes has pineapple cookies lined up on their lists. Including mine of course. I baked two batches this year, and here's the second one.

I was trying to shape some of them like tangerines, but i guess my plan backfailed as Hubby thought they were apples, instead of what they were supposed to be. :-(
Would try harder next year, and hopefully he has a more 'CNY' sense then.

Chinese New Year Eve: Reunion Lunch
Ta-da. Reunion meals are first thing that come for this festive season where every family would gather and long distance relatives/ friends fly home to sit down with their family members and FEI LOU SHIP together. There would be lotsa food and dishes being prepared and laid on the table, different in every Chinese home, depending on where their roots come from. Since i'm now married into a Northern Chinese family, instead of kiu nyuk or yong (stuffed) veges or chu kiok or chicken mushroom (i come from a Hakka family), we had altogether different menus this year, and jiao zi is the highlight for this occasion. Northern Chinese eat jiao zi (dumpling) in reunion dinners, or on CNY.
Hub's relatives came over and stayed with us for two days this year, and here's the first meal we had together as a family on CNY Eve:
Food prepared by Ah Yee and my in laws for the reunion lunch

Some drinks me and Hub got from Jusco.
Ever since the government legalised firecrackers and works here few years ago, firing them is a custom on every CNY eve night. Cars are not allowed to be driven on the roads at 11.45 to 12.15am midnight, as this is the period where firecrackers are most rampant. This is a photo i snapped from our house balcony: (pardon me for the poor image quality, as it was pretty dark at that time and i was freaking out)

First Day of CNYYeah, today is the first day, and i got my second hong bao from parents in law (who said married cannot get hong baos ah?). My own grandmama and grandpapa had actually asked my aunt who is visiting to pass me and Hub a packet of hong bao each. Have to admit the number i received is much lesser but the total amount is more in comparison to when i was single and i'm beginning to love marriage life even more! :-P
Hub's gufu went out and grabbed some of these for us, fresh haws sandwiched with red bean paste and sesame and dipped in sugar syrup. I have had fresh haws dipped in sugar syrup but never with red bean, which is very unique in my definition.

Instead of only mandarin oranges/tangerines which we normally had during CNY back home, we had strawberries too! Big,juicy and very sweet! (My first time eating sweet strawberries is here, never had i came across sweet strawberries previously, not even in UK)
Something new for the moo moo year, Hubby finally eats apple! I couldn't believe what i saw when he picked up that piece and put into his mouth, but here's an evidence.

Hub's Gugu's birthday happens to fall on the first day of CNY. To mark this occasion, dad in law specially requested me to bake two cakes for her, and also because it's her 60th birthday, which is one to remember. I actually baked them on the day before CNY eve, and decorated them on CNY eve morning, i.e. the few hours before they arrived, so do not be surprise if the strawberries on them aren't that fresh anymore as both cakes were only cut and consumed on CNY night.

First cake was cotton cheesecake, and the second (the 'zhu jiao'), was fresh cream fruit cake.

Pity i didn't manage to snap a photo of a slice of the cake, but basically it's made up of three sponge cakes with fresh cream fruits sandwiched in between. Took me one and a half day to bake, whip, chill and decorate it.

We had to get these big red candles, as normal birthday candles are nowhere to be found, but we are thankful that we had actually bought them after seeing how pretty and compatible they looked on the cake stand!

The 11-11 Rush Hour Birthday Carrot Cream Cheese Cake

What an exciting day today, i finally found some nice big red juicy and cheap strawberries!! Indeed a blessing from heaven, since strawberries are out of season now and even if you happen to see some on sale somewhere, they would probably cost you a bomb!! Back in KK, i was hessitated to buy strawberries, coz to me they're like the rich man's food: SUPER EXPENSIVE, and not only that, i normally find defects in them; either they are too small, not red enough or not fresh at all.

Hubby brought me to a big local market here early this morning as he wanted to get some teas and a new tea 'board'. The moment we entered the gate, these strawberries struck me, but what made me startled is the price on top!! RM5 for two boxes!! I couldn't believe it, and my heart was singing HALLLLLLLL LLLEEEE LUUUJAHHHH.. HALLELUJAH HALLELUJAH! I can never get strawberries at this price back home; not even at KL where i used to get from!! Without further undo and no need to bargain anymore like how we should at places like this, here are what i got back home:

Today was really a busy day for me. Busy Tuesday comes after Boredom Monday. Hubby's best friend, Felix is celebrating his birthday tonight which was kinda like a very last minute invitation to us, and since Hubby had promised a birthday cake, i had to rush myself to bake one the whole afternoon. Thank God i had grated some carrots yesterday (since it was boredom Monday and though i got my hand cut again :'( )so what else, only carrot cream cheese cake would do for this last minute call.

I couldn't start the baking right away when we got home at 12 sth noon, as mom in law has invited an auntie over for lunch and i had to help out in the kitchen (they were wrapping dumplings but since i got my thumb cut, it wouldn't be hygienic to help out with the wrapping so only did the pi dan dou fu). Only started at about half past one, and was interrupted in between when i found some yeast in the 'self raising flour' which Hubby claimed was 'self-raising flour'. Turned out it was 'quick bread flour'. And i had already mixed the flour into the batter -:S. Having no choice but to start all over, the cakes only went into the oven at half past two and came out at ten past three.

As time was running short, and i only had an hour (deducting cooling time) to decorate the cake, this was the best i could do (should be bestest since i also officiated my newly bought strawberries):

(P/S: Know what, snapping photos is one skill which i lack a lot, always find it hard to take good photos)

Finally finished the cake at five, we had to rush off to the party place to celebrate the occasion with the birthday boy.

Here's the big cute birthday boy cutting his cake:

Grabbing his first slice.....

No offense but Felix is sooo cute. As i was sitting down with Hubby just now before i wrote this blog, something just struck me: hey, i had actually made the right cake! Since Felix is a bit on the huge side, carrot cake does fit perfectly, as it is low in fat, nutritious (carrots are good for your eye sight), and importantly, i had reduced the sugar much more than the amount i normally reduced back home. The only fattening part is the cream cheese itself, however, a slice would only have some dabs by the side, on top and a very thin layer in the middle. Still low fat afterall!
Felix was Hubby's bestman during our wedding. He said he felt more secure having one who is twice his size, and i couldn't agree more until on the day itself, this cute bestman was late! Very un-usual-ly L-A-T-E. Have you ever seen a bestman who is late?? So late that our wedding has to be delayed for further an hour! Hehe, for this reason, everyone nicknamed him 'The Worst Bestman'.
Despite the tight schedule, I managed to steal a portion of the batter to be made as cupcakes for the family. Topped with cream cheese and some cut almonds:

Know what, people here don't normally fancy carrot cake, and some of them have never ever tried one before. The idea of having carrots in their sweet cakes sounds very doggy to them. Like mutton or beef in butter, sugar, eggs and flour. (Dunno if they like the carrot cake i baked, but they did gobble up everything though!)
In constrast, back home, carrot cake is in general quite a hit, and it is one of my favourites especially the one baked by my youngest yi yi. One word: Delicious and so i really don't understand why some couldn't accept it, but again everyone is different right? Thank God Hubby loves this cake. Infact this is the first cake i baked for him when we were in Sheffield!
I have tried a number of recipes but this is the one which i believe it is one of the best, giving a spongy texture:

Carrot Cake
Ingredients:
4 eggs (separated)
1 1/2 cups corn oil
140g fine granulated sugar
100g brown sugar
1 1/2 cups lightly packed grated carrots
(sift together)
250g cake flour
2 tsps mixed spices (i substituted with cinnamon)
1 1/2 tsps baking soda
100g chopped walnuts or pecans

Method
1. Beat egg yolks in a large mixing bowl and then add in oil, sugar, carrots. Mix wel.
2. Stir in dry ingredients and mix well.
3. Beat egg whites until stiff and fold into cake mixture.
4. Pour into a lined and greased 9" (i used 8") round baking tin and bake at 180C for 40 minutes.

Cream Cheese Frosting
Ingredients
120g butter
250g cream cheese
100g icing sugar
1 tsp of lemon/orange juice
some lemon/orange rinds
Method
1. Beat butter and cheese til light and fluffy
2. Put in icing sugar, juice and rinds and cream til smooth.
3. After cake has cooled, cut into halves and sandwich. Then top frosting and decorate as liked.
Do have a try, and last but not least, Happy Birthday, Felix!

Mr M's Birthday Cake

Here's the small small birthday cake i baked for Mr M's birthday last 1st October. It was American Baked Cheesecake topped with fruits, which i had miscalculated coz instead of indicating twenty-six (2 kiwis/cherries and supposedly 6 sliced peaches/grapes), i unintentionally put only 5 peaches/grapes so he read it as 25. There were 6 hearts though...which he didn't notice but the mistake (sigh)

Happy Happy Blessed Abundant Birthday, dear!

Sandra's B'day Cake

Hehe, i'm so excited, although i didn't sleep the whole night again for the second time this week (Mr Manager is not going to be happy to hear this!). I managed to upload all the pictures that i had specially taken to pose on my blog, and will therefore publish as many posts as i can today. Before this post was my tartlets of love, of which half of them were made together with this birthday cake, most for Sandra and extras for family and friends. As i have described earlier on, the below cake is Nutella Chocolate Hazelnut Cheesecake, covered with cream cheese and chocolate nutella (Ferrero's chocolate spread) and decorated with blue, purple, yellow and white flowers and Cadbury Chocolate Hazelnuts (very last minute deco).

I hope she likes the cake, although I had initially promised her a different cake altogether and despite that this cake is perhaps twice more fattening packed with extra extra calories. I felt a bit guilty after she told me that one of her resolutions made on her birthday was to lose weight and reshape, because it seemed like I have caused her to stumble and fail this attempt on her first day of resolution! Really bad of me, added more chocolates somemore…. :-P

Another Cross-shaped Cake (Combination of different cheesecakes with lotsa hearts)

Here's my cousin's 21st birthday cake which i made last Sunday. Combination of three different cheesecakes (mango, strawberry and blueberry) and the middle part is carrot cake! All covered with strawberry jam and strawberry yogurt cream cheese. Can you spot that someone in front of the cake...?? That's Na Na, my five year old cousin. The chubby little girl was trying to do some funny faces all night long (see the below pic) and Son-Son was imitating her.... :-S
