Shortbread is a type of cookie, so named due to its crumbly texture. Butter, being the main ingredient, contributes to the high fat content which then in return produces a short (crumbly) texture to the cookie.
Shortbread has always been one of my favourites (yeah, food with high fat content always taste great!) and one of those which i find super easy to bake (not sure whether this is good or bad). Being a less cookie fan myself, i normally end up with a super messy kitchen and not 'so proud of' products when comes to baking 'cookies'. Probably it's just me and I do acknowledge that they are much easier in comparison to bread or cakes, but the tedious clean up job after that? Well, that puts me off sometimes. Honestly, i do not understand why i create more mess when baking cookies than the rest. (???)
The good thing is, i don't see the trouble when comes to shortbread. They're so easy, any primary kid can do it in no time. Though so, i have to admit that to produce a nice, crumbly and buttery shortbread, ingredients wise and recipes are not something to be taken for granted at all. Be careful, not all recipes work. And, there's often a small trick to somewhere.
I used to munch the whole packet of Walkers all by myself in one go, and then regreted over it. Not only are they high in fat and calories, Walkers is like a rich man's 'chips' which can actually cost you a bomb depending where you buy them. Even in UK, they are more expensive than other cookies. Sadly, a young girl with small income like me can't afford Walkers everyday. To me they are luxuries. Something which you can only buy once in a long while to pamper yourself.
For this reason, i was often on search for good shortbread recipes and had made countless batches. Each recipe gives a different taste, texture, chunkiness and chewiness.
In addition, i also find shortbread a posh gift suitable for family and friends. Especially homemade ones.My simple way of presenting shortbread as gifts: Tie with a beautiful ribbon and wrap in an airtight gift bag.

Easy huh?
